  Celiac disease is an immune reaction, a severe sudden onset allergic reaction, to the protein called gluten. Gluten intolerance often has a slower onset than celiac disease, and may be hard to diagnose due to the broad range of symptoms and causes. what are the specific symptoms of gluten intolerance and celiac disease?
  • Weight loss or weight gain
  • Nutritional deficiencies due to malabsorption e.g. low iron levels
  • Gastro-intestinal problems (bloating, pain, gas, constipation, diarrhea)
  • Fat in the stools (due to poor digestion)
  • Aching joints

I've personally had problems with weight gain, aching joints, head aches, exhaustion and some mild depression. When I stopped eating wheat I could feel it in my joints. And when I get wheat, like yesterday I had a hotdog, I got a head ache. I have cut 95% of the gluten from my diet. I'm still trying to get that last 5% out. It's hard because they add wheat to everything. But even getting most of it out of your diet helps.

Grains allowed Rice, Corn (Maize), Soy, Potato, Tapioca, Beans, Garfava, Sorghum, Quinoa, Millet, Buckwheat, Arrowroot, Amaranth, Teff, Montina, Flax and Nut Flours.

Grains not allowed in any form
Wheat (Einkorn, Durum, Faro, Graham, Kamut, Semolina, Spelt), Rye, Barley and Triticale.

Welcome to the world with out cake!


For a few years now, my daughter has stomach problems. I also had problems with swollen joints and trouble sleeping. My problems seemed small and nothing worth going to a doctor about. But her problems were pretty bad. She is young, and had very little energy. We could not find an answer. So in desperation we tried going gluten free. And it helped. That was last November. And a large number of people in my family are going gluten free. So I thought I would write a blog about the new wheat free me. I'll write down recipes I like. I’ll  post articles I read. Anything that has to do with the new diet, I'll post it here. I'm no expert, just a beginner. But so far I'm doing good. Thank God Chocolate doesn't have any wheat in it!  Keep checking back, and I’ll be adding stuff to this blog.
